Culinary Institute of America trained Chef Nicola Blaque has dreamed of opening a Jamaican inspired restaurant for over ten years. She is bringing delicious Jamaican-inspired dishes to the San Antonio community. With a new artesian way of preparing traditional Jamaican foods, her spin on the taste of Jamaica will tell a story based on cultural perspective and history.
Recently recognized as a food capital, San Antonio has a wide variety of countries and flavors represent, except Jamaican food. Chef Nicola is ready to fill the Caribbean niche demanded in the San Antonio epicurean market. Her Jerk chicken and pineapple waffles was a hit at the SAGE gala and inspired her to open her own restaurant.

The goal of $20,000 will allow Chef Nicola to perform small renovations on a historic San Antonio building, along with purchasing equipment for the kitchen and lighting for the outdoor area.
With her vision of creating an atmosphere similar to a similar jerk shack in Mandeville, Jamaica, Chef Nicola wants to keep her jerk chicken as authentic as possible. Therefore, she is very specific about all of the details, from spices to lighting.
Any funds that exceed the goal amount will be reinvested into The Jerk Shack’s second location or a food truck.
If, for some reason, Chef Nicola’s goals are not reached, the money will be stretched as far as possible in order to make the best possible launch. However, Chef Nicola is confident that her Indiegogo campaign will reach the goal set, and she is excited to make her supporters proud.
