Ricotta Fritters, Lemon Mascarpone, Berries Serves 8
 
Ingredients: 4 cups vegetable oi l¾ cup all-purpose or bread flour 1 tbs. baking powder Zest of 1 orange Juice of ½ lemon1 cup whole milk ricotta cheese 2 large eggs, lightly beaten 1 ½ cup granulated sugar, plus 2 tbs. 1 ½ tps. vanilla extract 2 cups orange juice¼ cup spiced rum 2 bay leaves 10 black peppercorns Pinch of salt 1 cinnamon stick 2 star anise 8 oz. blackberries 8 oz. raspberries 8oz. mascarpone cheese, softened 8 oz. white chocolate 1 cup heavy cream
 
Instructions:Heat oil to 350 degrees.
 
For the Spiced Orange Sauce: In a 4 qt. saucepan, combine orange juice, rum, bay leaves, black peppercorns, cinnamon stick, and star anise. Cook for 10 minutes at medium heat or until reduced by half. Strain and allow it to cool. For the ricotta fritters:

In a bowl, add ricotta cheese, eggs, sugar, orange, lemon juice, and vanilla extract. Mix until combined. Fold in flour, a pinch of salt, and baking powder. Set aside in the refrigerator.

For the Mascarpone sauce: Melt 4 ounces of white chocolate. In a stainless-steel bowl, whisk together heavy cream and mascarpone cheese. Fold in white chocolate. If it is too thick, add more heavy cream.

To assemble: Using a plate, spread mascarpone sauce on base of plate. Toss fritters with spiced orange sauce and arrange 3 on each plate. Arrange berries around the fritters. Grate white chocolate over the dessert. Serve!
