Packaged in its distinctive black 12-ounce cans and eight-packs that look and feel more like an artisanal craft brew than a washed-out pastel soda container, Dr. Priestley’s initially comes in four flavors cultivated with combinations that are at once exotic and alluring. A yellow stripe across the can is Meyer Lemon Ginger, green is Cucumber Mint, pink is Rosemary Grapefruit, and blue is Original Virgin, each a refreshing taste on the traditional seltzer, all equally welcome to be consumed straight from the cold can, over ice, or mixed with your favorite spirit.

Dr. Joseph Priestley was born in Yorkshire, England in 1733 and died in Northumberland, Pennsylvania in 1804. Hailed as one of the world’s greatest thinkers and inventors, he was a theologian, teacher, and writer with over 150 works to his name. The inventor of carbonation and discoverer of oxygen, along the way, working in his laboratory in Leeds, England in 1767, he accidently discovered seltzer, earning him the nickname “the father of the soft drink,” a moniker celebrated today in the small batch fizzy water that bears his name.
Rovner and King, Manhattan-based business people who enjoy a good yarn that mixes mixology and genuine revolutionary history, happened upon Dr. Priestley’s story in The Invention of Air (2009), by bestselling author Steven Johnson, and promptly created Priestley’s namesake brew, drawn from the crisp waters of the Great Flats Aquifer in New York's Mohawk River Valley. Through a painstaking process of taste making that resulted in their four initial flavors, the proprietors packaged their thirst-quenching elixir in their distinctive black cans, encasing it, with tongues firmly in cheek, with the happy assurance to consumers: “Every Bubble Guaranteed.”
